I like to get a picture where I can make the other strings disappear behind
the E string, and then I imagine I'm looking "straight on" and getting a decent
reading...

That's what I use too. I have a string action gauge but I prefer the feelers better.

I have to agree that is the best method to guard against parallax error. I believe feeler gages may be better but you still need to pay attention to what you are doing and make sure they are flat against the fret.

I watched a video a few years back and the gentleman used coins to set action.
