John Butler's song Ocean is in open C and I am pretty sure he plays quite a few songs in open C but I'm not positive.

I believe Leo Kottke used to play "Louise" in open C tuning.
Two of Tom Rush's best songs, "No Regrets" and "Rockport Sunday" are both in open C.
