Working out pieces and composing

I'd been wondering how people like Doug Young and Larry Pattis approached working out pieces when I came across this video from Doug. He describes the process - "This video walks thru a process of arranging a Christmas tune, finding where to play the melody, adding bass notes and harmony, and eventually coming up with an arrangement. The example is from my book "A DADGAD Christmas." Synchronicity!
