My 1951 Gibson ES-125 has a very distinctive aroma. It has a vague sweetness that is not unpleasant, but yet smells "old."

I assume the aroma is from the aging glue and/or finish.



My 2018 Martin Custom Shop 00-18, purchased used a year ago, also has an unusual smell, but it's not particularly pleasant. It is sort of perfume-y, but in an artificial, chemical way. It might be offgassing from the case, but I'm not 100% sure. Fortunately the aroma is not very powerful and fades away quickly once the guitar is removed from the case.

Many guitars are smelly. Every Gibson I own, electric and acoustic, has this nice nitro smell. My Ovation guitars smell like new cars right from the dealer.

It's probably the nitrocelullose.
