Yes. The 614ce is the Grand Auditorium body shaped 600 series guitar in current production. If you didn't want the cutaway or electronics, you could probably order a straight 614 through a dealer (probably less $ too).

Buy a bone saddle at the Taylor store. Bone sounds better to me, Tusc can be very shrill.

Yep, you can get the GA shape in any of the Taylor series. Different back/sides/tops are available too. Different bracing too.

As to all-maple, just fwiw my friend has an amazing Taylor AB-4 acoustic-electric bass that is all maple. It seems to me that Taylor has made other all-maple instruments as well, although not recently.
