Got a picture of the saddle / bridge? That might help.

You could also consider an SBT or a magnetic sound hole pickup in lieu of the piezo.

I'm pretty sure a piezo can't be installed on that guitar. I'd look into a soundboard transducer system like the K&K Western, the Pickup the World #27 or #54, Baggs iBeam or the B-Band AST. You could also get a magnetic soundhole pickup. If your not concerned with feedback issues, a condenser mic could work for you as well.

Actually, most of the sounboard transducers are easy to install. Actually easier than a piezo and no more expensive. You have to drill a hole through your bridge for a piezo, but the transducers don't require any tools. It's just a little awkward reaching in through the soundhole to install.

We've actually done a number of these on guitars that have that style of proprietary pickup, and is not a very difficult job in the hands of a good luthier.
The old assembly is completely removed and the existing slot has to be groomed. It is then refilled, which is a permanant fix, and a new saddle slot is recut to accomodate a standard saddle. Many times it can be virtually unnoticable that it was ever done. This is a very similar procedure that is done on guitars that have intonation issues where a saddle slot recut is necessary. It's actually not as dramatic a procedure as it sounds. After this is done you can install whatever pickup you want.

I checked out the baggs site and listened to the ibeam, WOW!!!!!! Seriously thinking about it. Has anyone ever seen a guitar where they use a metal saddle holder before???
