I like the looks of this, and the reviews are really good. Shame the HiFi didn’t fit as they came out with the HiFi Duet and it has a sound hole mic.
I’ve been installing the HiFis and folks like the tone more so than the older Baggs units which were very good in a lot of guitars.

The SC is a fun shape, very playable and the neck is really nice. Glad to see basic dot inlay and a simple rosette, I never cared for the 13 appointments.

Yeah, I think the good old Baggs Element might be the best for this body shape. I tried an Anthem in the SC13e and it didn't sound great. Lots of people are happy with the stock Fishman pickup. Maybe it pairs well with the all sapele body?

I did not like the Fishman with my SC10 sapele. The Fishman braid is round and fairly thick, the Element is flatter and thinner. I think the Element pairs well with my SC10 and it also works really well with my Rainsong. It's not perfect acoustic tone, but for me it is a workable, (especially with outboard eq) consistent tone.
But everyone ears are different, you might like the Fishman with the sapele body.
