Very true - the more dynamic a guitar is, the more important controlling it is!

My acoustic bass does this also with stainless steel round-wounds, although the bite seems to disguise the bark a good bit.

So my Eastman E10-D kinda has a percussive “woof” when I dig in, strumming. It kinda sound like a combination of the A and D string together, especially when chording a C chord. Are you always playing the guitar in the same room and in the same standing/seated position in relation to the room's walls and furniture even after trying different strings? If so, try a different bodily orientation within your usual playing room and try a different room.
