No, never pick at my calluses. Sometimes I may pick at the skin at the side of the fingernail though, along the length of the finger but not the calluses.

Default finger calouses

When I first started taking lessons I developed callouses on my fingertips -- but after a month or so the strings kinda took them off -- now my fingertips just seem to be "tougher" that the rest of the skin - wouldn't really call them callouses.

My calluses used to bug me when they got rough, or when they got dried out (which very much accentuates that feeling of decreased sensitivity). Use an emory board to keep them smooth, and put some Burt's Bees lip balm on them when they start to dry out (but not before playing).
