In general, cedar should give you more responsiveness (a faster "attack" if you may) which is better suited for fingerstyle players. It also warms up the sound in a "creamy" kind of way. Almost smooths it out. The ones I have played have sounded very pleasant and soft - in my opinion, not something to strum hard or "rock out" to. It does have a lower "head room" in strumming. In other words, you will feel the guitar struggling sonically if you strum aggressively.

One of the nicest guitars that I have played was a 714ce koa limited with cedar top. The perfect instrument to make anyone fall in love with you.
