I will play a few openings of songs, like "Wanted Dead or Alive" because it starts at the 14th fret. I'll also play it A, all the way up the neck.
Then I'll see if I can play barre chords with ease.
If it passes all these tests, I start playing some blues licks.
If I bring out a new progression from the jump, or can't bring myself to put the guitar down, I'm pretty much sold at that point.
