Buy a Taylor. They are very consistent in construction and tone, imo. Any differences within a given model are often related to the strings, not the guitar (once again, imo).
Play an bunch and see what model you want.
If you find one on ebay that you like, ask the seller all of the questions that you need to have answered and ask for additional pictures, if needed.
If you are satisfied with the response and the price is right.....

If you want to hand pick a guitar, I would suggest that you buy from your dealer.

But, why not buy here (AGF Classifieds) instead?
I picked up an incredible 914c here a while back.
